You cant get better than bread zucchini (corgette) for a healthy eating option. This tasty, nut bread recipe is nutritious and will certainly go down a treat.

Zucchini is low in carb and can be cooked many ways. It is a particularly versatile vegetable that is especially suited to the vegetarian and low calorie diet.

For this healthy zucchini bread recipe, you'll need fresh zucchini or some you have thawed from frozen.





Nutty bread zucchini

  • Preparation Time: 10 minutes
  • Cooking Time: : 1 hour
  • Heat oven to: 350 *F
  • Makes: 2 loaves

  • 3 Eggs
  • 1cup olive Oil
  • 2 cups Shredded raw zucchini (courgette)
  • 1 3/4 cups Sugar
  • 1/4 teaspoon Baking powder
  • 2 teaspoons Baking soda
  • 2 teaspoons Cinnamon
  • 1 teaspoon Salt
  • 2 teaspoons Vanilla
  • 1 cup Chopped nuts
  • 2 cups Flour




    Preparation

  • Place zucchini in strainer and press with hand to remove excess fluid - discard fluid

  • Beat together eggs, sugar and oil

  • Add the flour, baking powder, soda, cinnamon, salt, vanilla and nuts

  • Using your hands, thoroughly mix together all the ingredients

  • Add the zucchini to the ingredients and and beat well

  • Place mixture into 2 greased, floured, loaf tins and bake for one hour
