Dairy Products

For vegans or vegetarians who do not eat dairy products, you will need to substitute the ingredients for your low calorie vegetarian recipe with other suitable alterenatives.


For example, vegetarian food products such as soy and soy - calcium-fortified soy milk and yoghurt etc., In can also use a high quality extra virgin olive oil in place of butter.

Low calorie and vegetarian - Cheesy Vegetable Bake

Preparation Time: 20 minutes Cooking Time:: 40-45 minutes

Serves 4:

  • 225g (8oz) broccoli florets
  • (Salt and pepper to taste/optional)
  • 25g (1oz) butter melted or extra virgin olive oil
  • 4 thick slices of granary bread
  • 225g (8oz) tomatoes, skinned and sliced
  • 100g (4oz) Mozzarella cheese grated
  • 2 eggs
  • 300ml (half pint) milk
  • l tablespoon grated Parmesan cheese



    Preparation

  • Heat oven to 190C (375F/Gas 5). Cook broccoli by steaming it for 5 mins - drain well

  • Cut bread into cubes, put half into a deep ovenproof dish, sprinkle with half the butter (or olive oil), add half the tomatoes, half of the Mozzarella and half of the broccoli

  • Repeat the layers as above. Beat eggs and milk with salt and pepper. Pour over contents in dish, sprinkle with Parmesan cheese.

  • Cook in oven for 40-45 mins. until browned and set. Serve immediately.
