Healthy Chicken Recipe


This healthy chicken recipe is an unusual dish of roast chicken breast, topped with a refreshing chilled sauce.

It makes an ideal chicken dinner meal to compliment your healthy eating diet.

Try adding chunks of red pepper to boiled brown rice for a crunchy accompaniment to your chicken dinner meal.

Chicken is a good low-fat alternative to red meat and provide a good source of nutrients to your diet. You can cut down on the calories by removing the skin from the chicken.

  • Preparation Time: 10 - 15 minutes
  • Cooking Time: : 30 - 45 minutes
  • Serves 4:

  • 4 boneless chicken breast
  • Salt and pepper - optional
  • 1 tablespoon olive oil

    Sauce:

  • 6 tble spoons low fat mayonaise
  • 6 tble spoons low fat Greek yoghurt
  • half cucumber, finely chopped
  • 1 tble spoon tarragon
  • 2 tsp celery seasoning



    Preparation

  • Pre-heat oven. Wash and dry chicken breast

  • Place chicken in a roasting tin, season well and sprinkle with olive oil

  • Cook in oven for 30-35 minutes, depending on size and until tender. Turn once during cooking

  • Meanwhile, beat together mayonaise, yoghurt, cucumber, tarragon and seasoning. Cover and refrigerate

  • Serve chicken hot, topped with chilled sauce

    Your healthy chicken recipe makes a wonderful, quick and easy dinner. Each chicken serving equates to approximately 370 calories per serving. (Less if you remove the skin, making it even lower in fat).


    Your chicken meal provide a good source of vitamin E. Although it is low in fibre, the accompaniment of brown rice is a fibre-rich source for your diet.
