4th Of July Recipe


Are you looking for a 4th of July recipe that is just that little bit different and has that "wow" factor?


If you're an American, your Independence Day celebrations are going to include the traditional red, white and blue theme. Why not spice up your recipes for 4th July by preparing a variety of red, white and blue foods.

For example, you could prepare an American flag cake for dessert, decorated with cherries and blueberries, or a delicious dried fruit compote. Or how about a healthy herb-baked tomatoe recipe, or even a mouth-watering tomato and onion soup?

I have a simple yet delicious tomato soup - made with onion, (red food) - that's just the perfect 4th of July recipe. It is substantial enough to serve as a main course and is ideal for vegetarians who only need to make one substitution.

The whole point of 4th of July Independence Day celebrations is to keep it simple so you you have plenty of time to enjoy yourself. The beauty of this wonderful tasting 4th of July recipe, is that the tomato soup can be prepared in advance, leaving you with very little left to do prior to serving.


Fourth Of July Recipe - Tomato And Onion Soup

  • Preparation Time: 25 minutes
  • Cooking Time: 25 minutes
  • Serves 4:
  • 1 Large Onion, very thinly sliced
  • 25g (1 oz) butter
  • 500 ml (18 fl oz) water
  • 1 x 425g can beef broth (or vegetable broth for vegetarians)
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tsp dried basil
  • 4 Slices French bread, toasted and buttered
  • 100g (4 oz) Mozzarella cheese grated
  • 2 tsp grated Parmesan cheese




    Preparation

  • Saute the onions in the butter over a low heat, stirring occasionally until soft and lightly coloured

  • Stir in the tomato juice, broth, water, lemon juice, salt and pepper and basil. Bring to the boil, then reduce heat simmer very gently for 20 mins

  • Skim the surface of the broth and ladle into 4 large soup bowls. Float a slice of toasted bread in each and sprinkle with the Mozzarella cheese and half a teaspoon Parmesan

  • Place under a hot grill for 3-5 mins until the cheese has melted
